We work daily in close contact with around 35 local dairy farmers. The milk we use in our cheese comes from contented sheep, free to graze in the beautiful hills of the Marche region. The careful selection of flocks which are raised in pastures and periodically monitored produce milk which is tested, pasteurised and worked on the same day that it is collected. We also produce mixed cheese made with cow milk, maintaining the same high quality.
