A mature cheese with a soft texture made from sheep’s milk. After an initial ageing process the cheese is transferred to the tufa caves in Sant’Agata Feltria. Despite its 12 month ageing process, the Nero di Grotta cheese is a combination of a distinct flavour and a soft texture.
